Vendor Spotlight: Sitka Salmon

Our favorite thing about the Plant Chicago Farmers Market is all of our wonderful local vendors! This month we’re highlighting one of our food vendors. With their headquarters based in Galesburg, Illinois, Sitka Salmon brings delicious, high-quality, responsibly-sourced wild seafood to the Midwest direct from their small boat family fishermen in Southeast Alaska. Photo by Sitka Salmon. 


SITKA SALMON


The Inspiration:

I was inspired to start Sitka Salmon Shares because it wasn’t always viable to sell hook and line caught fish on the global commodity market. Big industry didn’t fit how I wanted to fish and share my catch directly with Midwestern consumers.


Favorite Thing About the Work:

I get to connect with all kinds of passionate producers and consumers who love good food in the same way I do.


Engagement in the Local Circular Economy:

Through full integration and ownership of our supply, processing, and distribution chain, we can ensure the transparency and sustainability of our practices. Some examples of this are:

  1. avoiding by-catch through responsible harvesting methods

  2. utilizing all parts of the fish that we do harvest (have you tried our salmon burger meat and black cod cheek products?!).

  3. purchasing carbon offsets to account for the fish we ship from Alaska (which are put towards wind energy research and development efforts here in the Midwest).

  4. delivering our fish (to CSF member homes, restaurants, and markets) in Priuses as much as possible.

What We Have at the Plant Chicago Farmers Market:

Frozen wild-caught Alaskan seafood, including: Black Cod, Coho Salmon, Halibut, Keta Salmon, King Salmon, Pacific Cod, Rockfish, Salmon Burger Meat, Smoked Salmon, Sockeye Salmon, Spot Prawns
